Driving down Western Avenue on Chicago’s far South Side neighborhood of Beverly, you’ll know you’ve arrived when you spot the giant ice cream cone that stands as a beacon on the rooftop of this candy floss pink ice cream palace. On summer nights, there will likely be a line out the door as customers wait for a Rainbow Cone, which always comes complete with a few spoonfuls of nostalgia, too.

When Sapp developed his original rainbow of flavors, he invented Palmer House ice cream, a creamy vanilla dotted with toasted walnuts and sweet cherries. He named his fancy new flavor after the chicest hotel in 1920s Chicago: the Palmer House. If you want to make your very own Rainbow Cone at home, you’ll have to make your own Palmer House ice cream, which is best served sandwiched between strawberry and pistachio.

Palmer House Ice Cream

2 cups heavy cream

1 cup whole milk

¾ cup sugar

1 tablespoon pure vanilla extract

Pinch kosher salt

1 cup of frozen cherries

⅔ cup toasted chopped walnuts.

Whisk the cream, milk and sugar in a bowl until sugar is completely dissolved. Stir in the vanilla extract and salt. Add the cherries and walnuts. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions. Transfer to a freezer-safe container and freeze for at least 2 hours before serving.
